Blake Svejkovsky, General Manager of Heat and Control's Product Handling team, recently introduced the new FastBack Symphony On-Machine Seasoning System, a breakthrough designed for modern seasoning requirements and real-world plant conditions.
As Blake explains, the industry has shifted dramatically in recent years. Seasoning application levels that once hovered around 6–7% have surged into double digits, with blends now reaching 10–12%. At the same time, processors are working with more complex, natural, and spice-heavy seasonings that can be difficult to handle. Symphony was engineered specifically to take on these challenges—while also improving ease of use and sanitation based on extensive customer feedback.
At the heart of Symphony are two innovations: seasoning containment and seasoning capture. Seasoning containment uses controlled negative pressure to keep fugitive dust inside the system, eliminating unwanted buildup around the plant. Seasoning capture goes a step further, pulling airborne seasoning particles back into the product stream so that valuable ingredients land where they belong—on the product, not in the air.
The system’s thoughtful engineering really shines during cleaning and flavor changeovers. Operators can remove the auger, drain seasoning dust cleanly into a catch bag, and detach key components—all without tools. Even deep-clean tasks are streamlined thanks to lightweight, removable parts designed to fit directly into standard wash systems.
Inside the unit, the FastBall seasoning applicator spins at high RPM to create a uniform, curtain-like coverage for exceptional accuracy. Meanwhile, a cyclone-style airflow system captures up to 99% of residual seasoning dust, collecting it neatly for disposal.
